Preparing Tea

To begin, tea leaves are placed into a tea infuser, and hot water is poured over the leaves (or over a tea bag). When finished steeping, the leaves are removed and the tea is ready to be served. Each type of tea requires different levels of steeping time as well as various levels of water temperature. These may vary within specific types of tea, so be sure to check the packaging for further brewing information.

Always remember that the strength of tea is a product of how much tea is used. Over-steeping tea will create a bitter flavour. On average, one teaspoon of tea is used for one cup. Be sure to check labels for slight alterations. For stronger tea, add more tea leaves and for weaker remove some leaves. Do not increase or decrease steeping time.

Most tea leaves can be re-steeped after first use.

 

White: Steep for 1 – 3 minutes at 150°F (66°C) – 160°F (71°C).

Green: Steep for 1 – 3 minutes at 170°F (77°C) – 180°F (82°C).

Oolong: Steep for 2 – 3 minutes at 180°F (82°C) – 190°F (88°C).

Black: Steep for 2 – 3 minutes at 210°F (99°C).

Pu-erh: Steep for 30 sec – 5 minutes at 200°F (93°C) – 212°F (100°C)

Herbals: Steep for 3 – 6 minutes at 212°F (100°C).
